Ghevar is a popular traditional Indian sweet dish which people like to eat especially on special occasions such as Diwali.
Ingredients required for Ghevar: 3 cups plain flour, 1 cup solidified ghee, 3-4 ice cubes, 4 cups water, approx, 1/2 cup milk, 1/4 tsp. yellow food color, 1 kg. Ghee for deep frying.
For Syrup: 1 cup water ,1 1/2 cups sugar.
For Topping: (optional) 1 tsp. powdered cardamom, ghevar mould, 1 tbsp. chopped almonds & pistachios, 1 tbsp. milk in which 1/2 tsp. saffron has been rubbed in.
• Start by making sugar syrup of only single thread consistency.
• Now take up the solidified ghee in a bowl and use one ice cube at a time to rub on the ghee consistent. Repeat the procedure till the ghee turns white in color.
• Put some milk, flour and 1 cup water into the bowl containing ghee and mix well.
• Make use of food color by dissolving it in water and later adding it to eh batter prepared.
• Make sure the batter is quite thin so that it comes out in a smooth flow while pouring it from spoon. For this you can add more water if needed.
• Take an aluminum or steel cylindrical container without lid and dimensions ht.-12”, diameter-5.”
• Fill up this container with ghee halfway and then heat it.
• When you see the ghee is becoming smoky hot pour about 50 ml of glassful of batter right in the centre of ghee gently in one single continuous threadlike stream.
• Let the foam settle in and then pour one more glassful in the hole formed in centre of the earlier batter in the container. Use an iron skewer that is inserted in the hole to loosen the Ghevar once you see the foam once again settles in.
• Try to lift it out at a slant and then put it on a wire mesh so as to let it drain.
• Take a wide and flat bottomed container and put in the syrup.
• Start dipping the Ghevar in it, and then place it again on the mesh to drain the excess syrup.
• When it cools down a little use the silver foil to cover it!
• Sprinkle chopped dry fruits and saffron milk drops along with cardamom powder over it.
Your Indian sweet dish of Ghevar is ready to be served for your guests.
